Cillar de Silos is a relatively new estate that was only established in 1994 by the Aragon family. Although the winery itself is young, Amalio Aragon has been eyeing this region for several decades and he’s been buying up small plots of high quality vines from neighbours since the 1970s, well before the region was given its DO status, just waiting for the right moment to complete his dream of starting his own winery. They own about 68 hectares of vine all up some of which are pre-phylloxera.
Tastes Like
Torresilo is one of their flagship wines and this is the wine that best reflects the winery’s unique character and terroir. It’s a wine produced from a blend of grapes sourced from more than a dozen small plots of vines, some of which are over 100 years old that existed before phylloxera hit this region, surviving only due to the sandy and clay soil composition. Yields from these old vines are extremely low but what they produce ends up being very intense in concentration. The vines are also situated higher up in altitude than their other plots with an average of 870m above sea level. The 2015 is made from 100% Tempranillo, aged for 16mths in French oak.
